It’s obtained by separating the part where contre-filet and steak fillet are located at the rump from the point that flank and 7th rib are connected. It’s cut smoothly in shocked state so that its thickness doesn’t exceed 1,5 cm. Average weight of a parcel or a plastic case is 20-22 kg. Storage Conditions: For vacuumed packages: 0°C - +4°C, storage duration:10 days; 12 months at -18°C.
